Les Chemins de Sève Vin de France Natural Sparkling Rosé “Au delà des périls, l’espoir”

Mourvèdre

The grapes for this wine come from the alluvial terrace of the Aygues between Cairanne and Sainte-Cécile-les-Vignes. The terroir has a calcareous-sandy texture dominated by very fine silt. The vines were planted in 2016.

Natural Wine.

After manual harvesting, gentle pneumatic pressing and 48 hours of cold settling without additives, the grapes are fermented with indigenous yeasts in stainless steel vats at a temperature between 15 and 17°C. Malolactic fermentation was carried out, followed by three rackings under oxygen-free conditions. The following January, the wine underwent secondary fermentation in bottles using the Champagne method, without disgorging.

Jelly-like colour of quince. Fresh nose of peach, grapefruit and apples. Soft and very fresh palate with notes of cooked strawberries and apple tart.

This small domaine was created in 2010 by Loic and Caroline Massart when they purchased 9 ha of vineyards in the cru of Cairanne. The vines have been grown organically from the outset and some of the vines are over 80 years old. The grapes are harvested and sorted by hand into 20 kg crates. Loic and Caroline attach great importance to respecting the environment, the soil and the vines. This same philosophy is applied in the cellar, producing very low intervention wines where patience and gentle, persevering mechanical work are paramount.
